Dinner

I got sick today at work. Not like oops!-i'm-pregnant-sick, but more like i-caught-someone's-cold-at-work sick. I hate those by the way. I swear it's the grossest thing. Anyway, I bailed out of all my responsibilities this evening and decided to cook myself some soup and the rest of my veggies I bought at the Farmer's Market this past Friday. One day while I was home watching the Cooking Channel, Stormie somebody or 'nother, made these Greek looking meat rolls. I was literally drooling. I don't know the official name for them so I shall call them "Kale meat rolls".

Kale Meat Rolls

1 bunch of greens (collard, kale, etc. Whatever your choice)

1 lb. of Ground Turkey

3/4 of a White Onion

salt, pepper, & any random seasoning

Fill a large pot half way with water and bring to a boil. Clean and cut the green leafs from the stem and place in the pot. Season the water with the greens with salt, pepper, and any other seasonings you desire. Boil for 5-12 minutes or until greens are limp. Preheat the oven to 425 degrees. In a small bowl season 1 lb. of ground turkey with salt, pepper, and random seasonings. Once the greens are done boiling, take one leaf and place on a flat surface and then take a medium size pinch of meat and place in the center of the leaf. Fold the leaf around the meat starting with the sides and finishing by rolling. Take a second leaf and wrap around the first. Complete this step until all the meat and leafs are used.

Cover with foil and cook in the oven for 45 minutes or until meat is completely cooked.

Next I made home made chicken soup. It was friggin Yum. I was so proud of myself.

I sauteed some fresh spinach and sat down to have a meal while watching the SVU marathon.

At least your corporate cold didn't cause you to lose your appetite! Darling, you should call me when you cook, more often ;-)
