I'm really enjoying this

Today for lunch/dinner I made Bruschetta w/ sweet and spicy sausage(s). It was delicious. I used the recipe from Julia and Julia. You remember the scene in the movie when Julie and her husband Eric were sitting at the table. She was talking about her job and he was devouring the bruschetta and they decided there that Julie should begin the Julie Julia project. I had planned and still will make Beef Tenderloin w/ Red Peppercorn sauce tonight.

I was so excited and impressed with how easy it was to make. You begin with fresh vined (or heirloom) tomatoes

Dice the tomatoes into chunks and place them in a bowl. Add fresh torn basil and a generous amount of olive oil until it looks like this

And smells divine. Let the tomatoes sit and marinate at room temperature for at least an hour. After 45 minutes, slice your bread and pan fry it with olive oil. At this point you will want to season your tomatoes with salt and pepper. The salt allows the tomato juices to be released and it is absolutely heavenly. When your bread is browned plate it and put your tomatoes on top and Wa-La! You've got Bruschetta.

It is absolutely delicious with sausage but can be eaten alone. Hubbs loved it. He literally housed it. This has absolutely become the start of something great. :)
